Updated: Mar 16, 2022

Ingredients for Kiri Bath

  • 1 ½ cups of short grain, uncooked, white rice

  • 3 cups of water

  • 1 can coconut milk

  • ½ teaspoon salt

  • Optional: 2 cardamom pods

Ingredients for Lunu Miris

  • 2 cups of chopped red onion

  • 2 chopped red chili

  • 1 lime, squeezed

  • ½ teaspoon of chili powder

  • 1 tsp maldive fish chips

  • Pinch of turmeric

  • Salt and pepper to taste

Directions for Kiri Bath

  1. Prepare rice for cooking by rinsing thoroughly, about 4-5 times, until the water runs clear. Strain completely.

  2. Combine washed rice and water in a saucepan. Add cardamom if desired.

  3. Bring mixture to a boil over high heat, then reduce to low, cover, and cook for about 15 minutes, or until all the water is absorbed and the rice is tender.

  4. Once rice is cooked, stir in coconut milk and salt.

  5. Cook again over low heat while stirring, until the texture of the rice is creamy and thick, about 5 minutes.

  6. Remove cardamom and transfer to a dish. Cool until mixture is set, then cut into pieces if desired.

  7. Serve and enjoy!

Directions for Lulu Miris

  1. Add all ingredients *except lime juice* to a mini food processor (or mash together using a mortar and pestle) until the desired consistency is achieved.

  2. Stir in lime juice and extra salt if needed.

  3. Pour into serving dish.

Enjoy!
